Corned Beef and Potatoes in a Pressure Cooker

Pressure cooker corned beef is tender and flavorful, and ridiculously easy to make. Using a pressure cooker is the simplest way to make this holiday classic meal, going from start to finish in under 2 hours.

St Patrick's Day is this weekend. If you celebrate (and maybe even if you don't) then you have surely had corned beef, a classic meal for this holiday. We're not Irish and we don't celebrate St Patrick's Day but hubby loves corned beef. When I found a 2.75 corned beef on sale for $5.09 I had to pick it up for him. Now typically people cook corned beef either in the oven or in a slow cooker for hours upon hours. If you have an electric pressure cooker there's no need to ever do that again. Pressure cooker corned beef is tender and flavorful, and ridiculously easy to make. Using a pressure cooker is the simplest way to make this holiday classic meal, going from start to finish in under 2 hours. Hubby loved the flavor while I loved that the whole meal cost under $10 to make and doesn't take much effort. Here's how I make it.

Ingredients

  • 2.50 – 3 lb corned beef (I used a flat cut)
  • 2 cups beef broth
  • 2 lbs potatoes
  • 8 oz baby carrots
  • 1 head cabbage (optional)

Instructions

Pour the beef broth into the pot.

Place the steam rack into the pot.

Rinse the corned beef off with cold water.

Place the beef on top of the steam rack.

Sprinkle the seasoning packet on top of the beef.

Place the lid onto the pressure cooker and close to seal.

Set the pressure cooker to cook on manual high pressure for 90 minutes.

About 10 minutes before the cooking cycle finishes, peel the potatoes. Cut those into chunks and cut the baby carrots in half.

Once the cooking cycle has finished do a quick pressure release.

Remove the steam rack holding the beef and set it aside on a plate.

Place the steamer basket into the pot.

Put the potatoes and carrots into the steamer basket.

If you are adding cabbage to this dish, cut the cabbage in half and then half again and place on top of the other vegetables.

Put the lid back onto the pot and close to seal.

Set the pot to cook on manual high pressure for 5 minutes.

Brush the seasoning off of the beef and let the meat rest while the vegetables are cooking.

Once the second cooking cycle has finished do a quick pressure release.

Remove the vegetables and place them onto a platter with the meat.

Slice the meat against the grain and erve immediately, using the juice from the pot over the meat if you like.
